Central Texas barbecue tends to be a bastion of old school tradition. Oak is the wood of choice, brisket is consumed with white bread, and absolutely no sauce. Valentina's Tex Mex is a breath of fresh air in the Austin BBQ world, veering from tradition in all the right ways and infusing some much needed Tex-Mex influence into central Texas. At Valentina's they smoke their brisket with Mesquite, bringing a more intense flavor to the meat, they cover their brisket with fresh salsa and peppers, and throw it all on a sturdy homemade flour tortilla.
The sides here are diverse and distinctive and include Mexican rice, smoked corn, charro beans, and guacamole. At Valentina's, it's not just about the brisket, the smoked carnitas tacos topped with more fresh salsa caramelized onions and cilantro are just as delicious. They even offer their version of the ultimate Austin dish, the breakfast taco. Their version includes Mexican chorizo, refried beans topped with a spicy tomato-serrano salsa.
