Specializing in "elegant and modern Japanese fine dining," Tojo's is truly a Vancouver original. In October 2018, the restaurant celebrated thirty years in business and it has certainly been a storied thirty years. Chef Tojo, the restaurant's founder, was honored in 2016 by the Japanese government as a Goodwill Ambassador for Japanese Cuisine.
Although Chef Tojo honed his culinary skills working at a high-class traditional Japanese restaurant in Osaka, he longed for the opportunity to experiment with flavors and cooking methods to create new and exciting dishes. Many of the dishes he has since created, such as the California Sushi Roll, are famous in North America today.
Omakase, which means "Chef, I'm in your hands," is considered the best way to experience Tojo's. Chef Tojo pioneered this method of Japanese cooking in North America, in which he draws on the best and freshest ingredients of the day to prepare a custom dinner. The meal includes a selection of hot and cold dishes, and is prepared using organic and locally produced ingredients to the greatest extent possible. If you prefer to order from the menu, Tojo's offers a wide selection sure to suit a variety of tastes. Tap the link below for a look at the menu and Omkase offerings.
