Three Little Pigs is the brainchild of renown Austin chef Raymond Tatum. Raymond cooked for years at Jeffery's, perhaps Austin's most celebrated restaurant. In his tenure at Jeffery's he explored a wide variety of techniques and ingredients, and developed a particular affinity for Asian spices and preparations. At Three Little Pigs chef Tatum can indulge his creative instincts in a friendly and laid back setting. The trailer is conveniently tucked behind one of the more popular bars in the Burnet area, the Aristocrat Lounge.
The menu is as diverse as it is delicious, with influences from Mexico, Southeast Asia and the deep South. Some of the perennial favorites on the menu include the pork belly slider, the Asian fried chicken, and the cracklin meatloaf. The pork belly slider is topped with a maple soy glaze, sliced green apple, and fried onion with a side of sesame cole slaw. The cracklin meatloaf is wrapped in a layer of bacon and sits on top of southern style greens and grits. Three Little Pigs is a great part of the Austin's robust food truck scene, do yourself a favor and get out to Burnet roads best culinary experience.
