Perhaps the best representation of the food scene's growth in recent years is Sardella Restaurant. Sardella is an unconventional midwestern take on the classic Italian restaurant. The name Sardella comes from an ancient Italian sauce made from sardines, salt, and peppers. It’s a vibrant sauce in some ways very similar to the ubiquitous Vietnamese fish sauce, and it serves as inspiration for the cuisine at the restaurant. The menu is always changing to reflect seasonal ingredients as well as allowing the chefs to experiment with new flavor combinations. One of the most popular dishes on the menu right now is the pan-seared scallops with eggplant and cherry tomatoes served with a mint balsamic glaze. It would be a shame to visit Sardella and not try one of the homemade pasta dishes, and the house favorite is the ricotta cavatelli - a slow-cooked pork ragu with paprika, parsley, and whipped ricotta. From old world Italy to 21st century St. Louis Sardella is a must for anyone looking for great food in the Gateway City.
