Paul's Omelettery serves up traditional breakfast and lunch comfort dishes at its laid-back daytime restaurant space on Granville St. Open daily from 7am - 3pm, Paul's is the perfect place to fill up the tank and start the day. They do not accept reservations so patience is key at Paul's.
All egg dishes are made with BC free run chicken eggs and breakfast is served all day. Customers can enjoy traditional breakfast dishes like breakfast bagel sandwiches, pancakes, and eggs with bacon or sausage. They offer a variety of specialty dishes such as the Zimmer with poached eggs, avocado, sauteed mushrooms, and cream cheese on toasted rye bread finished off with their homemade cheese sauce and alfalfa sprouts.
Vegetarian options are available as well, including the popular Veggie Hash made of sautéed potatoes, mushrooms, onions, peppers, tomatoes, corn, and zucchini. It's then topped with two poached eggs, shredded cheddar, and edam cheese.
And of course, the omelets found on the menu result in happy customers. Some of the more recognized options include the Veggie, Denver, and Three Cheese omelets but Paul's really sets the bar high with their unique combinations. Their signature, the "1306", is piled high with a mixture of shiitake, oyster, and button mushrooms and is sautéed with garlic & onion, cheddar, edam, and cream cheese. In the spirit of its Northern Pacific locale, Paul's makes an omelet filled with smoked salmon, chilled pacific shrimp, asparagus, onions, and brie cheese. Make sure you stop by for a unique take on the classic omelet.
