Like many masters of their craft, Papi Queso owner Brian Stockholm found his passion for cooking by accident. In his case, he was a bartender who was asked to help in the kitchen when he discovered his love for cooking. He went on to graduate from the Culinary Institute of America. Using the skills he acquired, he built his own food truck with a specific vision in mind - to breathe new life into a simple childhood classic, the grilled cheese sandwich. While all of his sandwiches are excellent and made with the care and exquisite ingredients you would expect from a trained chef, one rises above the rest. This sandwich is called the Grilled Pig Mac and Cheese. The Grilled Pig Mac and Cheese consists of cheddar cheese, macaroni & cheese, caramelized bourbon onions, and pulled pork, making it the ideal comfort food after a long day or when you are visiting the city.
Naturally, a sandwich as good as this could not be kept as merely a local favorite for long. Papi Queso and the Grilled Pig Mac and Cheese were featured on an episode of Diners, Drive-ins, and Dives on the Food Network. During this episode, host Guy Fieri tried the acclaimed sandwich and was blown away by it. Today, thanks to this endorsement, Papi Queso is growing in popularity with locals in Charlotte and visitors to the city alike. One thing to keep in mind when you go to try the Grilled Pig Mac and Cheese is that Papi Queso is a food truck, so you will need to find its schedule to see where it is to ensure you will get to try this Charlotte delicacy.
