Luke’s Inside Out is the brainchild of longtime Austonian Luke Bibby. Located outside of Gibson Bar, the popular South Lamar watering hole, Luke puts his extensive experience in the Austin food scene to good use. In addition to the fixed menu of classics, Luke puts together three specials that are always evolving, creative, and wildly audacious for a food truck. This freewheeling approach allows Luke to cook seasonally and adapt to new culinary inspirations as they appear. Inspiration often comes from Luke's other hobby, gardening. Many of the herbs and peppers used at the restaurant come straight from his garden. Luke's also serves up one of the best brunches in the city every weekend.
Since opening Luke's Inside Out has received an avalanche of praise from high-brow food critics and Austin hipster foodies alike. The burger has been especially lauded as one of the best in the city, made with an 8oz sirloin topped with bacon and cheddar on a muffaletta. Some of the other favorites include the Pig, made with pulled pork, bacon, onion rings, and mozzarella with sun-tomato relish on french bread. So order whatever catches your eye on the menu, grab a beer at Gibson bar and be assured that Luke is cooking up some the most outstanding food in Austin.
