In August of 2005, Vic Corbi had a dream. While asleep, he pictured himself selling grilled cheese sandwiches out of an Airstream mobile home. That day, Vic was playing golf with his friend Matt and told him about the dream. Matt had a bar with a kitchen that was never used. Vic suggested they start up a grilled cheese restaurant in the bar.
Grilled Cheese & Co. was officially founded in October of 2005, but nothing much came of it at first. It was just an idea. Then, in 2008, they had the idea to serve gourmet grilled cheese at a wine festival in Columbia, Maryland.
The festival, which took place in 2009, was a huge success. Everyone loved the grilled cheese, but they still needed an actual restaurant. The first location was opened in 2010.
Nine years later, there are now three stores. You can find Grilled Cheese & Co. in Catonsville, Columbia Mall, and Waugh Chapel. If you don't feel like leaving your apartment, house, or hotel room, you can even order online!
As you might imagine, grilled cheese in on the menu. The signature sandwich is the "Crabby Melt," which has crab with Monterey Jack cheese.
If you want something substantial, order the Smashed Meatball, which has beef meatballs, provolone cheese, marinara sauce, and a dash of parmesan. If that's not what you're after, consider the Cordon Bleu, which has ham, grilled chicken, Swiss cheese, and a dijon mustard sauce.
Other grilled cheese concoctions include sandwiches with bacon, barbeque chicken, and vegetables with garlic aioli.
Grilled Cheese & Co. also has soups, salads, fries, and a kid's menu. They even have macaroni and cheese.
The Catonsville location is open daily from 11am–9pm. The Columbia Mall location is open from 11am–9pm from Monday–Saturday and from 11am–6pm on Sunday. The Waugh Chapel location is open from 11am–9pm from Monday–Saturday and from 11am–8pm on Sunday.
