The brewers of Empirical beer admit it: They're nerds. Their logo is based on an ancient hieroglyph of the word beer in the cunieiform language. They employ empirical observations while brewing, say their brewery is their laboratory, and name their beers after scientific principles. Their brewery cats are even named after Ghostbusters characters Venkman, Ray, and Egon. (Sadly Gozer passed away, but now has a barleywine named in her honor.)
The Empirical taproom is a great neighborhood spot to catch a game and have a beer. Communal tables, exposed pipes, and a wall of windows through which to view the 50-gallon tanks and brewing equipment all add to the laid-back ambiance. The taps feature a rotating selection of beers made in-house, each with names like Symbiotic, Proton Smash and Cold Fusion. Friendly, knowledgable bartenders are on hand to help recommend which brew might best match your palate.
Though there's no food on the menu currently, occasionally food trucks are on hand and if not, Empirical welcomes outside food. They also welcome kids until 8pm and dogs any time. So grab a game from the shelf, grab a beer, and grab a seat. You're going to love it here.
