If you're looking for an experimental and edgy spot to sample anything from a cold brew coffee over brunch to a craft cocktail after dinner, the Carbon Cafe and Bar is your place. Along with coffee and cocktails, this day-to-night eatery offers breakfast, lunch, starters, snacks, sandwiches, and more to please everyone in your crew. Although the options for vegan-fare are a bit sparse, traditional eaters and vegetarians will love the unique flavor combinations and hearty meal choices.
Relax into your morning with a cup of CBD coffee. If you are the more traditional type, find your way to the stand-by favorite drip coffee. Or try the Carbon Cold Brew nitro 48-hour proprietary coffee on tap. Brewed for two days before being infused with nitrogen, it has a slightly sweet and velvety texture without milk or sugar. They also have an extensive tea menu. The Chai Trio blends mint and cacao with almond milk and vanilla, or the Bhakti Chai will add some spice to your day.
Hungry guests love the new take on the old “Pigs in a Blanket” favorite. The Carbon Cafe and Bar’s version is made with mini hot dogs wrapped in brioche with stone ground mustard, which they’ve renamed a “Doobie Snak.”
One of their meatless meal options is the “Beyond Burger,” which includes a veggie pattie, provolone cheese, greens, pickled red onion, garlic aioli, and tomato. If you are dining with friends, split an order of “Wu Tang Tots” in different styles. Choose from Classic with salt, pepper, and method sauce; Smothered with country sausage gravy; or Loaded+Baked with cheddar, mo’nay sauce, bacon, sour cream, and chives.
The Carbon Cafe and Bar also participates in Colorado’s cannabis culture. One of their six menus specializes in hemp products. You can add CBD butter to your order of doughnuts or coffee, or sample a CBD bitter with your cocktail. The CBD beverage menu includes kombucha, coconut water, cold brew coffee, lemonade, or dram, which is cucumber and lemongrass.
If you feel uncertain about hemp, CBD is an abbreviation for “cannabidiol,” and the butters, oils, and tinctures won’t make you “high,” since they include only trace amounts of the chemical that causes intoxication. CBD is known for its anti-inflammatory, pain relief, and anxiety-reducing health benefits. It’s an option to try something new without the mood-altering effects of THC.
