Birdsong Brewing is the brainchild of Chris Goulet, Tara Goulet, and Conor Robinson. Chris was burned out from the corporate grind, Tara needed a break from her bread franchise and Conor was learning the art of homebrewing. The rest is history. Birdsong opened its doors in 2011 with just two full-time employees. The Charlotte beer community was immediately smitten, and growth was almost immediate. The next step was to get a bigger building and not long after Birdsong bought a 17,000-square-foot building in the Belmont neighborhood with a new 30-barrel brewhouse and room for up to 1,200 barrels of fermentation capacity.
The spacious new taproom opened in 2015 to rave reviews. Birdsong Brewing focuses on easy drinking American style ales with a kick. The amount of fermentation capacity in the new building allows the brewers at Birdsong to be especially creative, and find new flavor profiles. One of the most popular taps is the Jalapeno Pale Ale which is an adaptation of the Free Will Pale Ale with seeded jalapenos added. They are seeded to ensure that patrons can enjoy the subtle flavor and aroma of the jalapeno without being overwhelmed by spice. Another favorite is the Lazy Bird Brown Ale. Drinkable in any season, the Lazy Bird is a rich mahogany color with touches of coffee and chocolate with a mild citrus hop flavor paired with aromas of roasted malt.
The new taproom at Birdsong Brewing has been a huge success in the Charlotte community and is a great place to see up and coming Charlotte bands.
