One of the first Latin-inspired breweries in the country, 5 Rabbit Cervecería uses Central America and environs as inspiration for everything it does. Ancho chilies, passion fruit, and grasshoppers are a few of the many ingredients that make up “The Fives.” These four flagship beers line a huge spectrum of brewed beers, ranging from Paletas, a fresh fruit wheat beer twist on the summer Mexican popsicle treat, to Yodo Con Leche, a deep imperial porter with coffee sourced from Costa Rica.

Meet Ceasar Garza, also known as Champi, who was an early doubter of the 5 Rabbit Cerveceria concept, although as a good friend, and someone who trusts its founder, Andres Araya, inherently, he invested financially, left Mexico, and joined him at the brewery in Chicago. Since then, Champi has seen his world turn upside down as he tried to understand a unique American city, the subculture of craft beer, and ultimately helping leads sales and marketing for the county’s first Latin-inspired brewery.
